I have an Mexico 8 Reals (1793) coin. It has chop marks which is interesting. My question is that I am trying to determine the mint and can't find one that matches the symbol so far in my research. Any help or leads wound be appreciated. Photos attached.

    Peru?
The compressed "Lima" monogram resembles yours.
Always helpful to post a picture of the entire coin.

Definitely an 8 reales from Lima, Peru.

Chop marks can be a collecting subspecialty in itself. Some coins have so many chop marks and cuts, that the original designs are virtually obliterated, as illustrated below.

    26.4 grams

A sliver of this coin was removed, around one gram I would say, perhaps to create some small change?
